The Pompier

 

The Pompier, (french translation: fireman) a.k.a. Vermouth Cassis is said to have originated in Paris as working man's Kir, (not Keir!). It came to popularity in New York, post prohibition in 1930s and featured in Charles H. Baker Jr.'s Gentlemen Companion.

 

This cocktail is a cooling, refreshing spritz, which can quell a burning thirst. The creme de cassis pimps a vermouth & soda and turns into something more robust, like the afore said firefighter.
This cocktail would also be good for those wanting a full flavoured beverage without too much alcohol.

How to Make

  1. Pre-chill glass in freezer or chill with ice for 5 mins & discard

  2. Fill pre-chill glass with new ice

  3. Pour over No.3 S.E. Dry Vermouth & creme de cassis & top with soda.

  4. Garnish with twist of lemon or even better frozen blackcurrants.
