Pepito Spritz
Ingredients
40ml The London Vermouth Company No.2 Camille’s Red
20ml González Byass Matusalem Oloroso Sherry
75ml Conde de Haro Cava
Pink grapefruit wedge
Method
Gently pour all ingredients, in order, over ice into a burgundy glass (the big ones) and garnish with a grapefruit eighth.

Our Pepito is based on Tom Finnon’s Oloroso Spritz from the Hedonist in Leeds, (top 50 cocktail bars), a variation on Aperol Spritz, and an instant classic to boot. We’ve used a great cava (rather than prosecco in the original) for more dry notes. Props Tom, props!
